I was sitting at a wooden table on the family farm and orchard of cider makers Autumn Stoscheck and Ezra Sherman. A half-dozen cider samples sat in front of me, along with some amazing cheese, bread, and—of course—an apple. We’re real people running a working farm, creating traditional ciders made from apples grown specifically for cider making. A wide range of acidic, tannic, and aromatic fruit ranging from European bittersweet apples, to heirlooms, and crab apples. Eve's is one of the nation's most established cider makers, producing dry, artisanal bottlings since 2001—about as old as contemporary craft cider gets in America. I tasted batches made from a single apple variety, such as Northern Spy; others were sourced from a single place, such as Albee Hill, a veritable cider grand cru.

About 20 minutes up the road, the town of Trumansburg sits between Seneca and Cayuga lakes. "The only difference between what people call wine and what we call cider is the fruit it's made from," said Steve Selin of South Hill Cider, a few minutes southwest of downtown Ithaca. "There's been wine around here for a long time, and a lot of us picked up not only technical knowledge but also our palates from hanging out with winemakers." Ithaca’s craft cider scene has been silently growing and captivating new audiences for the past two decades. From the Ithaca Farmers Market to locally-sourced restaurants and the orchards themselves, cider experiences are all around you in Ithaca. Good Life Farm is our certified organic, diversified farm where we raise a wide array of fruits, vegetables, and livestock. Ranging from our cider apple orchards, strawberries, ginger, hemp, pastured chickens, Thanksgiving turkeys, and more! Much of this farm produce makes it onto the menu in our farm-to-table restaurant. Traditionally made from apples, though sometimes utilizing pears and other fruit, it's an ideal way to sample California's bounty—no apple picking necessary—with a little bit of booze.
The farm is not only USDA organic certified, but also Real Organic certified. Our ciders and lunch menu are available 7 days a week, year-round. We offer cider & wine flights and by the glass, along with an ever-growing selection of craft beers. Our farm-to-table lunch menu is seasonally rotating, with a focus on our pasture-raised BBQ.

At Blackduck Cidery, meanwhile, the attitude is unapologetically challenging. In the barn-slash-tasting room, John Reynolds, a lean, bearded man known as an iconoclast within the industry, pours wild-fermented ciders. Some are made with a high percentage of bracing crab apples; many incorporate chokeberries, currants, or pears. Wine transports us, evokes the romance of places far away and romantic—the rolling hills of Tuscany, perhaps, or the châteaux of the Loire Valley, or the steep slopes of the Moselle. Cider comes from places where your relatives live, or where you once went to summer camp.

We specialize in champagne method cider and wine production and offer a farm-to-table-lunch menu, every day. On a hill in Interlaken with views of Cayuga Lake, the Finger Lakes Cider House has become a can't-miss destination for cider aficionados since it opened in 2014. On my most recent visit, a diverse crowd picked apples, played cornhole, and chatted over sourdough pizza and salads made with ingredients grown on-site.

In my book, I called the Finger Lakes the "Napa Valley of cider." But on this trip, I realized what's happening there is something unique—and that it's still emerging. For the Finger Lakes, it seems the time has finally arrived. Yet every time I've stopped by, I've seen visitors happily surprised by what they taste. "Our ciders are dry, have a lot of acidity, and they're funky," Reynolds told me. "People who come here looking for a sweet cider are going to be disappointed." In New York's Finger Lakes region, producers are taking a modern approach to one of the country’s oldest beverages—apple cider. And mainly, we just want to make ciders that taste absolutely freaking amazing.
We started this farm to make this land a little better than when we got here. To make the soil a little deeper and the water a little cleaner. To these truly magical and invigorating cycles of the natural world.

In the tasting room, I nudged my way through a boisterous crowd to sample ciders ranging from the crisp, dry Pioneer Pippin to the earthy, barrel-aged Funkhouse. With 10 craft cideries in a 30-minute drive, Ithaca is an epicenter of craft cider. A visit to Finger Lakes wine country isn't complete without visiting the cideries as well.
